Bean to Bar is an artisanal production model where all stages of chocolate production, starting from the cocoa bean, are completely under the control of the producer.
Chocolate makers select the origin of their cocoa beans and process them themselves. They control the roasting, grinding, crushing, and tempering processes of the cocoa, thus determining the chocolate's flavor and character.
No, our products are additive-free. All Peraru chocolates are made with just two ingredients: qualified, organic cocoa beans and sugar. They contain no additives, lecithin, vanillin, or preservatives.
With our Single Origin philosophy, we use sustainably and ethically sourced premium cocoa beans sourced from Tanzania, Peru, Madagascar, Belize, India and most recently Venezuela.
All our chocolates are produced in small batches with intensive handcrafting in our workshop in Ortaköy, Istanbul.
No. We source our beans from ethical farms that do not employ child labor.
Child labor remains a serious problem in regions like Ghana and Ivory Coast, where the majority of cocoa production takes place. These regions supply approximately 70% of the world's cocoa production. This situation is particularly prevalent in large monoculture plantations, where cocoa is viewed solely as a cash crop.
The cocoa beans we use at Peraru come from traceable and ethical sources, meeting high quality standards. We source and pay above current market prices, and the farmers themselves, not large corporations, receive this payment. This helps eliminate the use of child labor.
We don't conduct heavy metal testing. Cadmium is a prominent heavy metal in chocolate. Cadmium and other heavy metals are most often associated with soil and areas near cadmium mines. While cadmium is found worldwide and in all products, it's not typically found in large quantities in the regions where you purchase cocoa. However, to be on the safe side, our suppliers periodically test their cocoa beans. We can share a few of our test reports upon request.
